Made sugar free strawberry jello for the potluck at work today. Yay for healthy choices!! Each 1/2 cup serving is 10 calories :)
Cinnamon sugar sweet potato fries: 170-200 calories depending on which kind of fries you use.
To make, place your serving of fries on a baking sheet. Mist with an oil spray so that your cinnamon and sweetener will stick. Sprinkle a no calorie sweetener (I used truvia) and a little cinnamon to taste. Bake according to the directions. Tadah!

Didn’t feel honest about posting workout and weight loss pictures when i barely had time to even do those things. (2 jobs + school = insane if you were wondering..) But with school being out now I have more time to focus on me! Plus I have to train for a half marathon that’s Labor Day weekend, so with that being said, you’ll be seeing a lot more of me around these parts :)
Take last nights leftovers of grilled chicken and steamed broccoli, add brown rice and low sodium soy sauce and you have yourself a yummy lunch for about 300 calories!
wowza guys. my bad on being MIA for a couple of weeks. To update you all on my life and what not.. here ya go :)
For christmas I got a Garmin which I am so excited about! I’ve used it about half a dozen times and I love the accuracy and everything else about it. I also bought myself some skeletoes. I am still trying to break them in. I sort of overdid it on the first couple of times wearing them and I got a really bad blister and the knuckle of my little toe has been pretty sore for a couple of days. So my plan is to walk in them for a little while longer to get my feet used to wearing them, and then I will begin running in them.
Steven and I are signed up for a 5k on February 25th called the “color run” which I am very excited about! And today I just committed to another half marathon that is in Disneyland Labor Day weekend. So I really need to start training for that so we don’t have another rerun of the Rock n Roll half marathon. (CAN YOU SAY PAIN!)
Today I started my first semester at the University of Nevada, Las Vegas. I decided to start going here rather than the local community college that I was going to. I am taking two classes this semester, World literature and Spanish. :)
I pretty much think that’s it. I need to get back on track on the diet front. I have maintained a steady 140 pounds, which is about 5 pounds higher than my lowest weight. I am going on a cruise to Alaska in July.. so that’s somewhat keeping me on track.
